A quick recipe that has the comfort of salty-sweet pasta inside 30 minutes. Step 1: oven 375. Olive oil on cookie sheet or roasting pan; something with low sides to allow the steam off, but catches the juice. Toss whole grape tomatoes (or chopped larger tomatoes) onto pan or cookie sheet, sprinkle with pepper, No Salt! Add: olives, capers too, if you have any ( that’s don’t worry if it is not completely preheated, it will catch up. Step 2: Wander through your cupboard for an herb to sprinkle by the pinch or pick some fresh herbs if you are lucky to have a plant. If you want fresh garlic, slice it big, you don’t want it too small, it will burn. My favourite herb for nearly everything: Thyme. I use 3-4 stems. Throw the twigs in too. Step 3: Boil up a pot of pasta as the tomatoes are roasting. I used Fusilli. You are all done, wait for the tomatoes to pop and get juicy, and the pasta to be tender. Think about protein. Do you have a can of tuna? Shrimp? It works. Pine nuts and Chicken too. Or nothing at all! Special treat, serve it up with a little cheese grated on top.
